Bill Maca

Bill Maca is the proprietor of HWM Yeast Solutions LLC, a consulting firm providing services in the areas of yeast propagation, yeast management, fermentation and implementing rapid methods for the detection of beer spoilage organisms and troubleshooting microbiological and fermentation related issues in breweries and wineries. He has consulted in the craft brewing industry for facilities ranging in size from 2,000 to 500,000 barrels of production per year, as well as projects with beverage giants Constellation Brands (Mexico) and MolsonCoors (Canada). Bill worked over 43 years in the brewing industry, beginning with quality control at Miller Brewing’s Albany, Georgia facility. Over his tenure with Miller Brewing (SABMiller, MillerCoors), he worked in various brewery and corporate functions including quality, research and new product development before retiring in 2013 from his position as Senior Yeast and Fermentation Scientist at the MillerCoors Technical Center in Milwaukee, WI.

Bill is an active member of the Master Brewers Association of the Americas (MBAA), the American Society of Brewing Chemists (ASBC) and the Society for Industrial Microbiology and Biotechnology, and a guest lecturer for the MBAA’s Brewing and Malting course and Brewery Packaging Technology course. Bill is also an extended faculty member for the Siebel Institute of Technology, instructing for several advanced and intermediate level courses and programs, such as the WBA Master Brewer, WBA International Diploma in Brewing Technology, WBA Advanced Brewing Theory programs, WBA Concise Course in Brewing Technology, as well as the Brewing Microbiology and Essential Quality Control courses, and contributes to the Siebel Institute’s consulting arm on an as needed basis.

Bill attended the University of Georgia where he received his M.S. degree in Microbiology, and holds an M.S. degree in Environmental Engineering from the Milwaukee School of Engineering.
